Field to Fork: Reconnected Farms Oyster Mushroom Stir Fry

Once you learn the ways of the wok you will be able to incorporate anything you want into your stir fry and can get crazy with combinations until you find the perfect stir fry for your taste buds.

One of the most transformational days of my life happened on November 14, 2021. For my 25th birthday, my youngest sister Hattie gifted me what would soon become the most overused pan in my house, the wok. This is the most versatile cooking utensil you may have never used or heard of. The wok and its most famous dish, the stir fry, is the best way to cook a large assortment of local vegetables, meat and mushrooms into one tasty dish that you are sure to love. My favorite part about stir fry in the wok is how customizable it is. I make one almost every week, and each week is a slightly different variation depending on how I am feeling. There are always multiple Tupperware containers worth afterward too, which is great for easy meals when I get too busy on the farm throughout the week.

Reconnected Farms Oyster Stir Fry Ingredients
2 lbs. oyster mushrooms 
to taste: carrots, green onions, mixed greens, frozen peppers and onions 
2 lbs. ground venison
1 cup dry rice, cooked 
Paleo Pink Salt Chili powder mix sprinkled in at various points of the process

Stir fry strategy            
This is the most important part, because once you learn the ways of the wok you will be able to incorporate anything you want into your stir fry and can get crazy with combinations until you find the perfect stir fry for your taste buds. 
The first order of business is to put oil that has a high smoke point (avocado, peanut, canola, sunflower and sesame oil work well) in a small pool in your wok. Don’t forget to start cooking your rice separately as well.
Then, prepare your ingredients. Things are about to get chaotic, so make sure you have everything you intend on adding chopped and ready to go. 
Next, place your wok over a stove burner on high and wait until your oil starts to bubble and pop. Now, it’s go time. Add everything all at once, and mix your stir fry continuously, putting things that are cooked on the side and things that need more cooking on the bottom in the oil until everything is done. 
After this, the last step is to add rice and the sauce/seasonings of your choice.
At this time, add the rice on the side, along with a very special sauce, made using honey from our neighbors at Wild Hives Honey.

Getting Saucy – 
Spicy Honey Teriyaki Sauce

¼ cup honey
¼ cup soy sauce
2 tbsp. butter 
3 cloves garlic
4 tbsp. chili garlic sauce
coconut flour/thickener of choice. 

This special honey sauce was made with local honey, butter, soy sauce, garlic – finely chopped – and of chili garlic sauce mixed into a saucepan. I simmered this for three minutes or so and then added coconut flour or any thickener of your choice until it is at the desired thickness. 
Add the sauce along with seasonings of choice and continue to simmer the cooked stir fry on low heat for a minute or so until desired consistency is reached. 
To conclude, I hope you find this recipe beneficial. I intentionally left the recipe open-ended so anyone could use whatever local ingredients they had on hand throughout the season and season and sauce it up to their own liking.
