Buffalo Chicken Meatballs
Buffalo chicken has a special place in my heart. And, with the Super Bowl around the corner (kind of), I am here to encourage you to take your Buffalo chicken dip to the next level this year with this recipe.
The good news about this recipe is that it is so versatile. You can use the base of this recipe and do so much with it. Just a few examples:
• Make it a meal and pair it with some rice and roasted cauliflower with a drizzle or two of sauce and blue cheese on top. This is the option that is pictured.
• Cook these meatballs and pop them in your crockpot with extra sauce for the perfect appetizer for the big game day. If you’re making them as an app, serve them with some cut up celery and cups of ranch and blue cheese.
• Or, if you’re feeling a little extra, cut open a pack of slider buns, like Kings Hawaiian, and make some Buffalo chicken meatball sliders with garlic butter on top. The more I write this the more ideas that I get excited about.
This recipe is super easy to make and calls for just a few items to prepare it. With a few extra ingredients, you can really make an awesome dish that your family and friends will talk about for parties to come. If your guest list is larger than a few, double this recipe. If you end up making too many, feel free to freeze them cooked to break out of the freezer at a later date for a last-minute dish.

Buffalo Chicken Meatballs
Ingredients
1 pound of ground chicken
2 green onions, chopped
2 cloves of garlic, minced
1-2 tablespoons of buffalo sauce
1 egg
1/4 cup of breadcrumbs
1 tsp salt
1/2 tsp black pepper
Sauce
1/4 cup of buffalo sauce
1 tablespoon of butter
How To
Preheat your oven to 375 degrees.
Mix all of the meatball ingredients, roll into 16 balls, and line on a prepared sheet pan.
Bake in the oven for 15-20 minutes until cooked through.
Mix together the buffalo sauce and melted butter and toss the warm meatballs into it.
Serve it up!
